I am available for health coaching in person to folks local to central Pennsylvania (Lehigh Valley to Hazelton area) and by phone and internet to anyone else. I have experience with real foods, gluten free, grain free and Gaps diets (Although I am not a certified GAPS practitioner). I also will work with insulin resistance, intermittent fasting, and type 2 diabetes. I can help you learn or adjust to a new way of eating and living including where to purchase the kinds of foods you want and need, what to eat and how to prepare foods, and will help you personalize a plan that is right for you. I charge $100/hour or $60 for a half hour session. There is also the option of a 6 hour package for $500 which could be broken up into 1 hour or 1/2 hour sessions. Another package option is $100/month with the 1 hour broken up into 15 or 30 minute check-ins throughout the month. Again a 6 month package would be $500 with the last month free. Initial consultations are free for the first 15 minutes to determine if I can help you.
I have a choice of 4 nutrition seminars for presentation in my local area of Pennsylvania. I am willing to travel up to 2 hours in any direction from my area. These are the choices of seminars and all can be from 1 hours to 2.5 hours.
a) Real Foods – This includes information about what a real foods diet is, how to transition into a real foods diet, ten principles of healthy eating, healthy sweeteners, and healthy fats. It also includes discussion of how to afford both time and money to make the necessary changes.
b) Gut Health and Fermented Foods – This seminar explains in detail why gut health is so critical and what can cause problems with gut health. Then I will explain what be done for healing and go through many different fermented foods. For the longer seminars I can also demonstrate how to make many of the fermented foods and drinks.
c) Grains and what should be done about them? – The seminar goes through the controversy about using grains and explains reasons to eat them or go grain free. I also will go through explaining the wide variety of grains that are available and some other aspects of gluten free baking. I explain how to make and use sourdough products as well. For the longer seminars I can demonstrate baking something with a more unusual grain.
d) Intermittent Fasting – This seminar will explain the benefits of intermittent fasting, who should and should not participate, how to fast, the relationship to insulin resistance, effects on metabolism, and how to deal with hunger.
Costs: $50/hour plus travel costs.
