Creamy Ranch Dip and Dressing (GAPS, paleo, dairy free)

This is a guest post from my 16 year old niece, Brooke, who is currently on the GAPS diet and doing really well. She is now coming up with some of her own recipes to help keep life more interesting and she sent me this recipe for Creamy Ranch Dip and Dressing.

Ranch dip Main

Mayo

2 egg yolks
1 tsp. dried mustard
Juice of ½ small lemon
½ tsp. sea salt
½ cup coconut oil (extra virgin will taste strongly to coconut so I suggest more refined coconut oil)
½ cup olive oil
2 tbsp. pickle juice (optional, for preserving) 
 

In a food processor, pulse to mix the yolks, mustard, lemon juice, and salt. Melt the coconut oil slightly so it becomes a liquid (if you heat it to much it will cook the eggs). Add to olive oil. Then with your food processor on, slowly pour in the oil mixture until it emulsifies; start with 1 to 2 drops, then a few more, then a few more, then begin a slow steady stream. After oil is all combined add pickle juice.     Tip: I always use a food processor for the mayo, for me it never turns out right when I use a blender.

Dip                          

1 batch mayo (above)
1 ripe avocado
1 tsp. paprika
2 tsp. granulated garlic
1 tsp. onion powder
½ tsp. salt
2 tsp. parsley flakes
½ tsp. pepper
1 Tbsp. white wine vinegar (apple cider vinegar is also an option)
 
Peel and pit the avocado (the more ripe it is the creamier your dip will be) and chop into small pieces, put into food processor with mayo, mix until smooth. Then add the spices and white wine vinegar. This dip is best with veggies…carrots, celery…..Yummmmm.
 

Dressing 

1 Cup creamy ranch dip
3 Tbsp. olive oil
3 Tbsp. lemon juice
 
Mix all the ingredients in a bowl then enjoy J
Note:  You may need to add more or less of the lemon juice and olive oil depending on how thick or thin you normally like your dressing

    Looks good! you should have seen Brooke and I when she made the dip. She kept rearranging the carrots to get the perfect shot. Then they got all messy, which obviously wasn’t pretty. So I started to “take care” of them. ( which means pulling all the carrot sticks out of the bowl and placing the on the table until I could ‘dispose’ of them) We eventually got the shot, but boy was that dip good!
