I love making my own broth and stock and have been so for the past few years. I can’t believe I ever bought broth now that I know how easy it is to make and how wonderful it is for health, especially for healing the digestive tract.
So when I picked up the book Broth and Stock by Jennifer McGruther from the Nourished Kitchen, I was not a newbie to making my own broth. I found that I learned several new tips and got some great new recipes. For instance I have always used vinegar to draw out the minerals from the bones. I learned from Jennifer McGruther that wine is another option that will do the same thing and it enhances the flavor more than vinegar.
She also gives direction to reduce your stock so it is easy to store because it takes up less space, and it is very concentrated. I have found this very helpful as I have not done this before.
Some of the great new recipes I have gained are kitchen scrap broth, green broth (been looking for a good vegetable broth base), chicken soup with parmesan, rice, peas, and lemon, thai style chicken soup, beef tea (yes it is a real thing and not just in English books), quick pho, white bean and bacon soup, and New England clam chowder.
This is a good basic book that any cook can appreciate. If you have never made broth before this is a great book to start with as her explanations are clear and directions are easy to follow. If you are experienced at making your own broth, there are still some tips of value and you will get a whole set of new recipes (with wonderful photos) which is always welcome.
